My youngest daughter entered…
…her first Girl Scout Bake Off.
She chose to bake …
…Aunt Anne’s Lemon Bars.
They are amazingly easy.
And oh, so luscious.
Lemon Bars
Crust:
1 cup butter
½ cup powdered sugar
2 cups flour
Preheat oven to 350 degrees.
Cream and press into an ungreased jelly roll pan (15 x 10 x 1). Bake 15 minutes until light golden brown. Note: I prefer to use a food processor for the crust and pulse the ingredients until the size of small peas. Pour into pan, spread evenly and press to form the crust.
Lemon Filling:
4 eggs
2 cups sugar
½ teaspoon salt
4 Tablespoons Fresh Lemon Juice, with grated rind from lemons used
Combine the above ingredients until thick and lemon colored. Add
1 teaspoon baking powder
¼ cup flour
Pour on hot crust. Bake 20 minutes or until golden. Cool and sprinkle with powdered sugar.
